Watermelon Popsicle

It’s summer in Miami and for those of you not familiar, Miami in the summer is H-O-T hot! Miami is humid and you often find yourself dripping almost as soon as you walk out the door. Let alone if you’re exercising outside, you’re just completely drenched! Exercise is best done before the sun even comes up! But with that hot, humid weather comes many tropical fruits that we’re able to grow here. So you will not hear me complaining about the weather. I love all the tropical fruit I can get!

But with this heat comes the need for hydration. Usually I’ll drink plain water and have a ton of fruits and veggies throughout the day. And while all of that adds up for my usual fluid intake, every now and then I want something more. Something that will literally cool me down immediately. Enter homemade popsicles: watermelon, blueberry, peach, and even fudge! I made one a couple of weeks ago with some strawberries that were about to go bad that were quite tasty. Ever since I’ve been meaning to make more. I love to experiment! In between I’ve made cinnamon rolls, sticky buns, and vegan marshmallows. All good, but not hydrating. Next I tried to make ice cream, but ice cream just doesn’t quench my thirst. But it was naturally blue ice cream, so there’s that.

I bought a watermelon last week and let’s just say I might need some help in picking a better watermelon. It might have been the worst watermelon I’ve ever selected. And to top it off, I was doing a Zoom cooking demo and cutting it live in front of people. They can attest it was the worst looking watermelon. Hate wasting food and didn’t want to throw it out, so I figured I’d try to turn it into popsicles. Watermelon already has enough water and sure it’s great to eat as is. However if you’ve picked a ‘not so great one’ turn them into a popsicle before you toss it out! Hydration via popsicles: water, fruit, and cold goodness, they’ll help cool you down. Watermelon Popsicles, you’re going to need them!

Watermelon Popsicles

Hydration via Watermelon popsicles.  Watermelon, lime juice, mint, and water.  That’s it!  Watermelon Popsicles to cool you down.  And with this summer heat, you’re going to need it!

Ingredients

Units Scale
  • 4 cups cubed watermelon
  • 1 tablespoon freshly squeezed lime juice
  • 1 tablespoon mint syrup, optional*

Instructions

  1. Blend the watermelon, lime juice, and mint syrup in a blender.
  2. Pour the mixture through a fine sieve into a bowl, pressing the fibrous melon with the back of a spoon to extract the maximum amount of juice.
  3. Pour or spoon the juice into popsicle molds and freeze until solid.  If using popsicle sticks, insert the sticks when the popsicles are partially frozen.  Makes ~8 popsicles.

Notes

*I used strawberries (1 lb) previously and the added sugar is really up to you as to how much you want to add in – it depends on how sweet the fruit is as well as how sweet in taste you like them. With my strawberry ones I didn’t add sugar at all. With this watermelon one I did as it was not sweet at all. I always start with one tablespoon and then add an additional one and taste in between to see if it needs more.

*The lime juice really makes the watermelon flavor pop.   You can always add a little additional if you like. Some fruits pair better with lemon, but in this case, watermelon goes great with lime!

*If I have extra mint leaves (that I’ve bought for the week) I’ll add actual mint into the blender. vs just the mint syrup. I like mint with watermelon – and again, because this watermelon was not the greatest, more mint could’ve really helped improve the flavor.
