Homemade Fudge Popsicles without a pudding mix! These fudge popsicles are the perfect cold treat on a hot summer day. The hardest part is waiting for them to freeze, but the payoff will be delicious.

Summer officially has started. And here in Miami the temps have been hot and humid. I mowed my lawn this past week and I literally almost melted it was so hot – a little exaggeration, but it was definitely hot! Enter a homemade popsicle to help fuel me and cool me down! I jumped on the homemade popsicle bandwagon during quarantine and I must say they really are quite simple to make. As cliché as it sounds, the hardest part is waiting for them to freeze.

Blueberry, Peach, Watermelon, and Mango Popsicles are the flavors I’ve made so far. Nothing beats a fruit popsicle on a hot summer day – hydration, fuel, and all in one refreshing. But I’ve been wanting to make a fudge popsicle like I remember from my younger days. I’m not sure why, but they really are my favorite. Do the grocery stores sell a comparable one? Sure. But you know me, always on the quest to make something homemade. If you don’t have a popsicle mold, simply use a small disposable paper cup or even your ice cube tray with a popsicle stick. Honest, they turn out just the same. The popsicle mold is simply able to be used again and for me has been more convenient.

Ingredients: Homemade Fudge Popsicles

  1. Milk – My fruit popsicles didn’t need much liquid to mix everything together since the fruit naturally has water. However, with these popsicles you do need some liquid to get things moving. I used whole milk to make them decadent. I’m sure any milk will do.
  2. Sugar: You’re going to want to add some sugar to sweeten the cocoa and chocolate. I used a third of a cup and think it could even get by with just a quarter cup. I opted to use sugar vs maple syrup or honey – I haven’t tried the others.
  3. Cocoa Powder: Use an unsweetened cocoa powder, not a hot cocoa mix here. Using a mix of cocoa powder and dark chocolate helps the chocolate flavor really come together.
  4. Dark Chocolate– You can use semisweet chocolate here if you prefer, but I went with the dark chocolate and let me just say, delicious!
  5. Salt– Just a pinch of salt and you won’t even notice it’s in there. The small pinch helps draw out more chocolate flavor (a little trick!)
  6. Cornstarch – Remember we’re making almost a homemade chocolate pudding, so you do want the chocolate to thicken. Enter your secret ingredient: cornstarch. You can sift this in to make sure it doesn’t clump together as it sometimes can do.
  7. Vanilla – Pretty much used in all my recipes. Optional, but highly recommend as it help the chocolate flavor to be more pronounced as well. And side note, I’ve recently started making my own homemade vanilla too (just need to get around to posting that recipe!)

How To Make Fudge Popsicles

These homemade fudge popsicles are almost like chocolate pudding on a stick. Creamy, fudgy, and simply delicious. With just a few simple ingredients these come together in no time! Make these for your next get together!

  1. Mix: In a medium saucepan mix the milk, sugar, cocoa powder, cornstarch, and salt together over medium-heat.
  2. Warm: Your goal here is to make sure everything is all stirred together and the sugar dissolves. The key is to not let the milk get too hot and boil.
  3. Whisk: Whisk together until the mixture starts to thicken and is smooth.
  4. Add: Now is the time to add your chocolate. It will melt fairly quick, but keep stirring until the mixture is thickened, about 1-2 minutes.
  5. Remove: from the heat and add the vanilla in. The mixture is thick but still able to be poured.
  6. Transfer: the mixture into the popsicle molds. With the molds I have I was able to get 4 popsicles. If you use a different size, like the paper cups, you might be able to get a few more. I really should just double this recipe – on the recipe button below you can!
  7. Freeze: Place your sticks in the popsicle mold. I add the stick but don’t let it go all the way to the bottom – to ensure I have a long enough stick to hold onto! Freeze until firm, about 4-6 hours.

  • 2 tablespoons unsweetened cocoa powder, sifted
  • 1/3 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/8 teaspoon salt
  • 1 ounce dark chocolate, chopped
  • 1/2 teaspoon vanilla

Instructions

  1. Mix. In a medium saucepan mix the milk, sugar, cocoa powder, cornstarch, and salt together over medium-heat.
  2. Warm the mixture till hot, but not boiling.  Your goal here is to make sure everything is all stirred together and the sugar dissolves. The key is to not let the milk get too hot and boil.
  3. Whisk together until the mixture starts to thicken and is smooth.
  4. Add the chopped chocolate.  It will melt fairly quick, but keep stirring until the mixture is thickened, about 1-2 minutes more.
  5. Remove from the heat and add the vanilla in.  The mixture is thick but still able to be poured.
  6. Pour the mixture into your popsicle molds. With the molds I have I was able to get 4 popsicles. If you use a different size, like the paper cups, you might be able to get a few more. I really should just double this recipe!  The recipe button at the top lets you increase!
