Peanut Butter Crispy Rice Treats

Peanut Butter Crispy Rice Treats are a perfect and chewy twist on the classic Rice Krispies. Made with marshmallows, peanut butter, and chocolate on top. They’re an easy, no-bake treat ready in just 15 minutes!

Halloween is next week! Bring on all the festivities, food, and fun, even if it does land on a Tuesday this year. A couple of years ago I created my Halloween Snack Board as a way to show how to have fun with food for the kids. Additionally, the board serves as a great way to show how to incorporate foods that are sometimes seen as ‘off limits’ and rather show kids how they can be included. Eating and/or snacking prior to going out and trick-or-treating is important to help kids have a meal versus eating candy for their meal. This year I decided to make a traditional dessert, but put a little spin on its flavor with these Peanut Butter Crispy Rice Treats!

Peanut Butter Crispy Rice Treats – Ingredients

You only need a few simple ingredients to make these Peanut Butter Rice Crispy Treats Recipe:

  • Marshmallows – it doesn’t matter what size marshmallows you use, although I usually go for the mini marshmallows because they melt quicker. Use vegan marshmallows if needed. (I only had the large marshmallows on hand and they did take longer to melt).
  • Peanut butter – Natural creamy peanut butter is what I used here. Not a fan of crunchy peanut butter and yes, I used the natural version here versus brands that add sugar in.
  • Butter – Butter is traditionally used to make rice crispy treats. Using half the amount here as the peanut butter has natural fats and you’re able to get by with using a little less. You can also use a non-dairy butter alternative if you’d like to make these dairy-free treats.
  • Vanilla extract – optional, but I always tend to add a teaspoon in to my recipes.
  • Rice Krispies – Honestly any brand of Crispy Rice cereal will work for this recipe. And truthfully, cereal prices have gotten out of hand. These were purchased one day when they were buy one get one free.

The chocolate topping is optional, but it really takes these treats to the next level. Peanut butter and chocolate are like peas in a pod. Here’s what you need for it:

  • Dark chocolate chips – I used dark chocolate chips versus a chocolate bar. In my picture I made sure to cover the treats, but after eating them and trying it a second time, I’m a fan of simply dunking the treat in the chocolate and not using as much chocolate. You can do either way you like.
  • Vegetable oil – Helps the melted chocolate stay smooth and spreadable. Not necessary if you dunk the treats in the chocolate.

How To Make Peanut Butter Crispy Rice Treats

These classic Peanut Butter Crispy Rice Treats are a perfect no-bake dessert to bring to potlucks, parties, or anytime you’re after something chewy and sweet, but not too sweet. Let’s make this quick and easy recipe!

  1. Melt the butter over low heat in a large pot. Stir in the marshmallows and cook until fully melted and no marshmallow white remains.
  2. Stir in the peanut butter until combined and melted. Take off the stovetop.
  3. Stir in the cereal (with a little muscle!) until distributed evenly through the marshmallow mixture. It will be sticky!
  4. Pour the mixture out onto a greased (with cooking spray) pan or baking dish. I used an 8×8 square pan, however, you can spread them thinner to fit into a 13×9 pan as well. Smooth out the top of the treats (as best you can – I used wax paper) so it’s even! Don’t press too hard or else the treats will be too dense.
  5. Melt the chocolate with the oil over low heat. Option 1: Pour it overtop in an even layer, let it cool slightly, then sprinkle with flaky sea salt. Option 2: Cut the treats into even squares and quickly just shallowly dip the top side of the treats into the chocolate.
  6. Cut into squares when the chocolate has completely hardened if you did option 1. And for option 2, simply turn them chocolate side up and set in a baking dish or on a rack until they set. You don’t need to put them in the fridge, but you can if you’d like to speed things up. Enjoy!
