Tofu has a reputation for being bland, but that’s actually one of its greatest strengths. Think of tofu as a blank canvas—it readily absorbs the flavors of the ingredients you pair it with. In this recipe, savory soy sauce, tangy Dijon mustard, and nutty nutritional yeast infuse the tofu with plenty of flavor, while a sweet and tangy ketchup glaze creates the perfect finishing touch.

Ingredients: Glazed Tofu Loaf

  • Extra-firm tofu (1 pound): The star of the recipe! Extra-firm tofu holds its shape well after pressing and provides a hearty texture while serving as an excellent source of plant protein.
  • Panko breadcrumbs (½ cup): These light, crispy breadcrumbs help bind the loaf together while creating a tender texture that isn’t dense.
  • Sautéed onion (¼ cup): Cooking the onion first softens its flavor and adds natural sweetness and moisture throughout the loaf. Sauteeing them adds an extra step, however, I am not a fan of having the raw onion mixed in.
  • Soy sauce (2 tablespoons): Adds savory, umami flavor that seasons the tofu from the inside out.
  • Nutritional yeast (2 tablespoons): Provides a subtle cheesy, nutty flavor that enhances the savory profile.
  • Dijon mustard (1½ teaspoons): A small amount goes a long way, adding tanginess and depth while complementing the glaze.
  • Garlic powder (¼ teaspoon): Adds savory flavor that’s evenly distributed throughout the loaf. Opting here for the powder vs fresh garlic to avoid having a larger piece throughout the loaf.
  • Black pepper (¼ teaspoon): Balances the sweetness of the glaze and rounds out the seasoning.
  • Ketchup (½ cup): Creates the classic meatloaf-inspired topping with tomato flavor that caramelizes beautifully in the oven.
  • Brown sugar (2 tablespoons): Adds just enough sweetness, but also not overly sweet, to balance the acidity of the ketchup and vinegar.
  • Apple cider vinegar (1 tablespoon): Brightens the glaze with a tangy finish that keeps it from tasting overly sweet.

How To Make Glazed Tofu Loaf

  1. Preheat the oven to 350°F. Lightly grease or line a loaf pan with parchment paper.
  2. Press the tofu well to remove as much moisture as possible.
  3. Crumble the tofu into a large mixing bowl.
  4. Add the panko breadcrumbs, sautéed onion, soy sauce, nutritional yeast, Dijon mustard, garlic powder, and black pepper. Stir until evenly combined.
  5. Press the mixture firmly into the prepared loaf pan.
  6. Whisk together in a small bowl, the ketchup, brown sugar, and apple cider vinegar.
  7. Spread the glaze evenly over the top of the loaf.
  8. Bake for 30 minutes, or until the glaze is slightly caramelized and the loaf is firm.
  9. Allow the loaf to cool for about 10 minutes before slicing.
