For the Tofu Loaf
  • 1-pound extra-firm tofu, crumbled
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup sautéed onion
  • 2 tablespoon low-sodium soy sauce
  • 2 tablespoons nutritional yeast
  • 1 1/2 teaspoons Dijon mustard
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
For The Glaze
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat the oven to 350°F. Lightly grease or line a loaf pan with parchment paper.
  2. Press the tofu well to remove as much moisture as possible.
  3. Crumble the tofu into a large mixing bowl.
  4. Add the panko breadcrumbs, sautéed onion, soy sauce, nutritional yeast, Dijon mustard, garlic powder, and black pepper. Stir until evenly combined.
  5. Press the mixture firmly into the prepared loaf pan.
  6. Whisk together in a small bowl, the ketchup, brown sugar, and apple cider vinegar.
  7. Spread the glaze evenly over the top of the loaf.
  8. Bake for 30 minutes, or until the glaze is slightly caramelized and the loaf is firm.
  9. Allow the loaf to cool for about 10 minutes before slicing.
