Beans are one of my favorite pantry staples because they’re affordable, versatile, and incredibly nutritious. Yet, many of us still don’t eat enough of them. This version gives the viral dense bean salad my own twist by tossing everything in my homemade Cilantro Jalapeño Dressing. The creamy dressing adds just the right amount of fresh cilantro flavor with a subtle kick of jalapeño that complements the beans and vegetables without overpowering them. It’s a combination that’s bright, fresh, and perfect for warm-weather meals.
Ingredients: Dense Bean Salad
- Mixed beans (2 cans, 15.5 ounces each, rinsed and drained, low-sodium or no added salt): Using a variety of beans—such as chickpeas, cannellini beans, black beans, kidney beans, or pinto beans—creates a salad with different textures, colors, and flavors while adding fiber and plant-based protein.
- Bell peppers: Their natural sweetness and crisp texture provide color and balance the hearty beans.
- Cherry or grape tomatoes: Juicy tomatoes add freshness and brighten every bite.
- Pickled Red onion: Always in my fridge and ready to use. You can use raw onion if you prefer or want to skip a step. However, I prefer pickled red onion for a little less bite!
- Raw corn: Fresh corn cut from the cob is wonderful in the summer, but frozen (thawed) or canned corn works just as well. It adds a touch of natural sweetness and a pleasant pop of texture that pairs beautifully with the beans.
- Red Cabbage: Cabbage adds a crisp, refreshing crunch and holds up exceptionally well, making this salad ideal for meal prep. Both green and purple cabbage work well or use a combination for extra color.
- Cotija or feta cheese (optional): Adds a salty, creamy finish that complements the bright dressing. I prepared the salad with both, and I have to say with my dressing I preferred the salad without the cheese. I felt that the cheese was almost too overpowering for the salad and took away. It could be that I added too much, so I’d say start with less and add more if you prefer.
- Cilantro Jalapeño Dressing: This vibrant dressing ties the entire salad together with fresh cilantro, a hint of jalapeño, bright citrus, and a creamy texture that coats every bite.


How To Make Dense Bean Salad
- Rinse and drain the black beans and chickpeas thoroughly, then transfer them to a large mixing bowl.
- Dice the bell peppers into small, bite-sized pieces and add them to the bowl.
- Slice the grape tomatoes in half or quarters and stir them in with the beans and peppers.
- Cut the kernels from the cob. If using frozen corn, thaw it first; if using canned corn, drain it well. Add the corn to the salad.
- Shred the cabbage (or use pre-shredded cabbage or coleslaw mix for convenience) and add it to the bowl.
- Add the pickled red onions and roughly chop them if the slices are long. Add them to the salad.
- Pour the Cilantro Jalapeño Dressing over the ingredients and gently toss until everything is evenly coated.
- Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld together. For the best flavor, prepare the salad a few hours ahead of time or even the day before.
- Before serving, give the salad one final toss. If needed, drizzle with a little more Cilantro Jalapeño Dressing to refresh the flavors. Enjoy chilled as a satisfying lunch, a side dish, or an easy meal-prep option throughout the week. Leftovers keep well in the refrigerator for 3–4 days, making this an excellent meal-prep recipe.
