Fresh basil has a way of taking over the garden—and the refrigerator—during the summer months. While pesto may be the first thing that comes to mind, basil oil is another simple and delicious way to put those fragrant leaves to good use. With its vibrant green color and fresh herb flavor, basil oil can instantly elevate everything from grilled vegetables and salads to pasta, soups, pizza, and even avocado toast.

One of my favorite things about basil oil is how versatile it is. A quick drizzle can transform a simple dish into something that feels restaurant worthy. It’s also a great way to preserve some of that fresh basil flavor before the season comes to an end. By briefly blanching the basil before blending, you’ll achieve a brighter green color that makes this oil just as beautiful as it is flavorful.

Ingredients: Basil Oil

  • Fresh basil leaves (1 packed cups): The star of the recipe. Summer basil provides a bright, peppery, slightly sweet flavor and a beautiful green color.
  • Extra-virgin olive oil (1/2 cup): Serves as the base of the oil and helps carry the fresh basil flavor throughout the recipe.
  • Ice water: Used to quickly cool the basil after blanching, helping preserve its vibrant green color.
  • Pinch of salt (optional): Can help enhance the flavor of the basil.

Instructions: How To Make Homemade Basil Oil

  1. Bring a small pot of water to a boil and prepare a bowl of ice water nearby.
  2. Add the basil leaves to the boiling water and blanch for about 10 seconds, just until the leaves wilt and turn bright green.
  3. Transfer immediately the basil to the ice water bath to stop the cooking process. Once cooled, drain well and gently squeeze out excess moisture using a clean kitchen towel or paper towels.
  4. Place the blanched basil, olive oil, and optional pinch of salt into a blender or food processor.
  5. Blend until completely smooth, about 1–2 minutes. The mixture should be vibrant green and fully combined.

At this point, you have two options:

For a Smooth Basil Oil

Pour the blended mixture through a fine-mesh strainer, cheesecloth, or coffee filter into a clean jar or container. Allow the oil to strain naturally, pressing lightly if needed. Discard the solids.

For a Rustic Basil Oil

Skip the straining step and store the blended mixture as is. The small flecks of basil provide additional texture and concentrated basil flavor, making it ideal for spooning over vegetables, pasta, and grain bowls.

Transfer the basil oil to an airtight container and refrigerate until ready to use.
