Have you ever thought about trying tofu but weren’t quite sure where to start? Maybe you’ve heard it’s bland or simply didn’t know the best way to prepare it. If that’s you, you’re in the right place! This pan-fried tofu recipe is one way to create a crispy texture without deep frying. One of the things I love most about tofu is that it acts like a blank canvas. On its own, it has a very mild flavor, which means it takes on the flavors of whatever seasonings or sauce you pair it with. Whether you toss it in a savory stir-fry sauce, coat it in a peanut sauce, or add it to your favorite curry, the sauce is really where the magic happens.

Over the coming months, I’ll be sharing a variety of tofu recipes because I truly believe there are many ways to prepare the same food. My hope is that if tofu hasn’t been a favorite in the past—or you’ve never tried it—you’ll discover a preparation that you genuinely enjoy. You don’t have to give up meat to enjoy tofu. Think of it simply as another delicious, budget-friendly source of plant protein that can add variety to your meals.

Why Extra-Firm Tofu?

Extra-firm tofu works best because it holds its shape during cooking. Before you begin, take a few minutes to press the tofu to remove as much water as possible. The drier the tofu, the crispier the exterior becomes, and removing excess moisture also helps the cornstarch stick more evenly.

Ingredients

  • Extra-Firm Tofu: The foundation of this recipe. Its sturdy texture stands up well to turning in the skillet while providing a satisfying bite. Pressing the tofu first is one of the most important steps for achieving crispy results.
  • Cornstarch: is the secret to a light, crispy coating. Before adding it to the tofu, sift the cornstarch to remove any clumps so it coats the cubes evenly. Instead of stirring vigorously—which can cause the tofu to crumble—gently toss or shake the tofu until each piece is lightly coated.
  • Neutral Oil: A small amount of oil is all you need to create a beautifully browned exterior. Rather than crowding the skillet, cook the tofu in two batches. Giving each cube enough space allows it to brown instead of steam. Neutral oils include Canola, Grapeseed, Safflower, Sunflower.

How To Make Pan Fried Tofu

  1. Press the tofu. Remove the tofu from its package and press it to remove as much excess water as possible. This step is key to helping the tofu become crispy.
  2. Cut into cubes. Once pressed, cut the tofu into evenly sized cubes (about 1-inch pieces) so they cook at the same rate.
  3. Coat with cornstarch. Place the tofu cubes in a large bowl or shallow dish. Using a fine-mesh sieve, sift the cornstarch evenly over the tofu. Gently toss or carefully turn the cubes until they’re lightly coated on all sides. Avoid stirring vigorously, as the tofu can break apart.
  4. Heat the oil. Add 1 tablespoon of oil to a large nonstick skillet over medium-high heat. Once hot, add half of the tofu cubes in a single layer, leaving space between each piece. Crowding the pan will cause the tofu to steam instead of brown.
  5. Brown the tofu. Cook for 2–3 minutes per side, gently turning each cube until all sides are golden brown and crispy. This takes a little patience, but it’s worth it for the best texture.
  6. Repeat with the remaining tofu. Transfer the cooked tofu to a plate, then add the remaining 1 tablespoon of oil to the skillet and repeat the process with the second batch.
  7. Use as a base for your favorite recipes. Enjoy the tofu immediately while it’s at its crispiest. Toss it with your favorite sauce and add it to stir-fries, grain bowls, curries, salads, or noodle dishes.

Amy’s Tip: This tofu is best enjoyed fresh. While leftovers can be reheated, I’ve found the texture becomes tougher—even in the air fryer or toaster oven. If you’re planning to meal prep or make extra for later in the week, my Air Fryer Tofu recipe is my preferred option because it reheats better and requires much less hands-on time.

My Honest Take

I’ll admit it—this tofu is delicious. It develops a wonderfully crispy exterior and tastes fantastic fresh from the skillet. That said, it’s also a bit of a labor of love. Turning each cube so every side browns evenly takes time, and in my experience, leftovers don’t reheat particularly well. I’ve tried both the air fryer and toaster oven, and the tofu tends to become tougher rather than crisping back up.

For that reason, I usually make just enough for the meal I’m serving. If I’m looking for meal prep or leftovers, I actually reach for my Air Fryer Tofu recipe instead. It requires very little hands-on effort—just a light coating of cooking spray—and once it’s tossed into a grain bowl, stir-fry, or salad with sauce, it’s every bit as satisfying for my taste.

Sometimes the “best” recipe isn’t just about flavor—it’s also about what fits your lifestyle. If you enjoy the process and want extra-crispy tofu for tonight’s dinner, this pan-fried version is absolutely worth making.
