Dulce de Leche vs Caramel

Are they the same thing? No. They’re similar, but not the same. Caramel is made by heating sugar, caramelizing it, and then adding cream and butter. Dulce de leche, on the other hand, is made by caramelizing the sweetened condensed milk. This slow cooking process gives it a creamy texture. Both are rich, golden, and sweet; however, caramel is made from sugar, and dulce de leche is made from milk.

  • Sweetened Condensed Milk: that’s it. Just one ingredient. Sounds too good to be true, right? However, it really is just one ingredient and a little time that will transform your sweetened condensed milk into dulce de leche.

How To Make Dulce de Leche

  1. Prepare the can. Remove the label from the can of sweetened condensed milk. Check that the can is undamaged and has no pull-tab top (a solid, sealed can is safest).
  2. Place in the Instant Pot. Set the can on its side or standing up in the Instant Pot. Fill the pot with water until the can is fully submerged, with at least 2-3 inches of water covering the top.
  3. Pressure cook – Lock the lid and set the valve to Sealing. Cook on high pressure for 35 minutes for a lighter, pourable dulce de leche, or 40 minutes for a thicker, darker version.
  4. Natural release – Allow the Instant Pot to naturally release pressure. This helps the can cool more gently.
  5. Cool completely – Using tongs, carefully remove the can. Let it cool completely to room temperature before opening (this is important—opening while hot can be dangerous).
  6. Enjoy – Open the can, stir well, and transfer to a jar. Store covered in the fridge for up to 2 weeks.

Safety Tips

  • Always make sure the can of sweetened condensed milk is completely submerged in water during cooking. Ensure that it has at least 2-3 inches of water covering the top.
  • Only use cans that are fully sealed (no dents, rust, or pull-tab lids!)
  • Allow the can to cool completely to room temperature before opening – opening a hot, pressurized can is dangerous.
  • Following these steps, it IS safe to make dulce de leche in the Instant Pot (with a sealed can of sweetened condensed milk).

Storage

To store dulce de leche, transfer it to an airtight container and refrigerate for up to 2 weeks. For longer storage, place it in a freezer-safe container and store it in the freezer for up to 3 months. When ready to use, thaw in the refrigerator and gently reheat if needed to restore its silky texture.
