It’s officially apple season—and while everyone’s buzzing about pumpkin spice everything, I have to admit that apples (and even pears!) are my personal fall favorites. There’s something so naturally sweet, crisp, and comforting about them. From cozy baked desserts to refreshing drinks, apples bring that perfect balance of flavor and nostalgia that just feels like fall—no pumpkin required.

- Apple Cider: The star of the drink! Use a high-quality, chilled apple cider for the best flavor—preferably freshly pressed. It adds natural sweetness and cozy fall notes.
- Champagne or Sparkling Wine: Choose a dry (brut) champagne or prosecco to balance the sweetness of the cider. The bubbles make this cocktail light and celebratory.
- Apple Slices: Thinly sliced apples add a beautiful garnish and a hint of fresh fruit flavor. Try using Honeycrisp or Gala for a crisp, sweet bite.

How To Make An Apple Cider Mimosa
- Prepare the Glasses:
If desired, rim each champagne flute with cinnamon sugar. To do this, lightly dip the rim of the glass in apple cider, or you could use honey (like I did for the picture). Then slowly dip the rim of your glass into a wide bowl or plate filled with cinnamon sugar (equal parts cinnamon and sugar). Shake off any extra. - Pour the Champagne: Add champagne to the glass about halfway full. Adding the champagne first allows the mimosa to mix, but also avoids the champagne from bubbling over!
- Add the Apple cider
Slowly add the cider to the remaining half of the glass. Using cold cider helps keep the drink crisp and refreshing. - Garnish and Serve:
Add a thin apple slice or a cinnamon stick for garnish. Serve immediately and savor the perfect blend of sparkling bubbles and cozy fall flavors.
Recipe Tips for Success
- Select your bubbly – Mimosas are traditionally made with champagne; however, it can be expensive to get true champagne. A dry Prosecco (Italian sparkling wine) or Cava (Spanish sparkling wine) is fantastic and a cheaper alternative. If you are using champagne, a dry Brut is best. As this is a blended drink, a moderate to low-priced bottle will work just fine; however, as it’s only 2 ingredients, sometimes I say go for the expensive one! And if you simply want to make a mocktail, you can always use sparkling water.
- Use a real champagne flute – and no, it’s not just to look all fancy. The narrow mouth of the flute decreases the surface area, which allows for the bubbles and carbonation to keep on bubbling. A little science behind this for a perfect mimosa!
- Find a good ratio – A good mimosa shouldn’t be overly sweet; however, for this recipe, I used equal parts apple cider with the Prosecco. You could use the ratio of 2/3 sparkling wine to 1/3 fruit juice. And if you prefer a slightly sweeter version, try 1/4 sparkling wine to 3/4 fruit juice.
- Sparkling wine first – While this is really a preference, what I’ve noticed is that in making these cocktails, it is far easier if you add the bubbly first. If you do it the other way, it’s really difficult to pour the sparkling wine on top of the juice without it bubbling up so much that it overflows, which turns into a sticky mess, not to mention wasting precious champagne!
- Don’t stir – the bubbles in the sparkling wine mix the drink, and stirring can cause the drink to go flat faster.
