Peaches and Cream, Popsicle-Style! Peaches, yogurt, mint, and honey.  That’s it!  Creamy, refreshing, & delicious.  Make some before the peaches & summer are all gone!

Ingredients

  • 2 cups Greek yogurt, full-fat
  • 2 teaspoons vanilla
  • 4 ripe peaches
  • 1 tablespoon honey
  • 2 tablespoons fresh mint
  • 1 peach sliced thin

Instructions

  1. Blend – in a blender, blend the yogurt, vanilla, 4 ripe peaches, honey, and mint.
  2. Cut the peach in half and remove the pit.  Thinly slice each half into thin slices.  Place a few slices into each popsicle mold.  (this is optional but I highly recommended!)
  3. Divide the peach mixture among the plastic popsicle molds evenly.  Leave a little room at the top for expansion.  Cover the mold and insert wooden craft sticks.
  4. Freeze the popsicles until they’re completely firm and the sticks are set, about 6-8 hours.  To remove the popsicles, run the outside of the mold under hot water for a few seconds.  This will help the popsicles to release a bit easier.
  5. Serve and enjoy!
