Mango-Avocado Salsa

Salsa aka one of the best additions to tacos.  Ever.  This mango salsa is easily adaptable with other fruits – feel free to switch out and use this as a guide for rough estimations.  Either way, it’ll take your tacos to next level!

Ingredients

Units Scale
  • 2 cups diced mango
  • 1 cup diced red pepper
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • Salt and pepper, to taste

Instructions

  1. Combine in a medium bowl the mango, red pepper, red onion, cilantro, and lime juice.
  2. Toss to combine and season with a pinch of salt and pepper – remember you can add more OR less onion, cilantro, and even avocado.  You do YOU!
  3. Refrigerate the salsa for 30 minutes before serving.  Serve immediately after.

Notes

*The flavor combinations really are endless: Blackberry-Basil, Peach-Mango, Pineapple-Kiwi.  I can’t wait to keep creating and taste them all!

*This particular salsa doesn’t last in the refrigerator for up to 3 days due to the mango and avocado getting too ripe.  Make less if necessary to use up what you make.  During mango season, I make up a small amount each time I need it.

*Remember, you can always adjust the amount of onion and cilantro.  You can even add some tomato, red pepper, or a jalapeno if you like.  That’s the beauty of salsa, you can figure out the ratios of how you like it!  This picture has red pepper instead of avocado and it was divine!
