- 4-ounces goat cheese
- 12 Medjool dates
- 1/8 cup pistachios, chopped
- 2-3 sprigs of thyme, sprinkled as garnish or mixed in

Instructions
- Prep the dates: Slice each date lengthwise and remove the pit if not already pitted, keeping the date intact.
- Portion the goat cheese: Cut a 4-ounce log of goat cheese into three equal sections. Cut each section into four pieces, giving you 12 evenly sized portions.
- Mix the filling: Place the goat cheese pieces in a small bowl and gently mix with thyme leaves and a pinch of black pepper until just combined. Alternatively, you can sprinkle each date with thyme leaves if you prefer not to mix it in.
- Stuff the dates: Press or spoon one portion of goat cheese into each date.
- Add crunch: Sprinkle or gently press chopped pistachios over the filling.
- Finish and serve: Arrange on a platter and drizzle lightly with olive oil or honey if using.
