  • 1 cup sugar
  • 3 1/2 ounces fresh ginger (1 cup), peeled, and sliced into matchsticks

Instructions

  1. Prep the Ginger Use the edge of a spoon to gently peel the ginger (this helps remove the skin without wasting too much of the flesh). Slice the ginger into thin matchsticks for maximum flavor infusion.
  2. Combine Ingredients: In a small saucepan, combine the water, sugar, and prepared ginger.
  3. Simmer Bring to a gentle simmer over medium heat, stirring until the sugar fully dissolves.
  4. Infuse: Reduce heat and let simmer for about 10–15 minutes, allowing the ginger to infuse and deepen in flavor.
  5. Cool & Strain: Remove from heat and let cool. Strain out the ginger and transfer the syrup to a jar or bottle.
