Dark Chocolate-Dipped Mandarins

3 Ingredients.  Chocolate. Mandarins. Pistachios. The slightly bitter dark chocolate paired with the sweet mandarins and extra little crunch from the pistachios equals the perfect sweet snack. Add this as another simple, yet impressive snack/dessert to make!

Ingredients

  • 1/2 cup 60% dark chocolate chips
  • 4 mandarins, peeled, in segments
  • 1/4 cup shelled, unsalted, pistachios, finely chopped
  • 1 1/2 teaspoons coconut oil

Instructions

  1. Place chocolate and coconut oil in a small bowl set over a pan of simmering water.  
  2. Cook, stirring occasionally, until just melted, 1 to 2 minutes.  Stir until smooth.
  3. Peel pistachios, finely chop and place in a separate bowl.
  4. Remove pan from heat but keep the bowl over the hot water.  Dip mandarin segments halfway into the chocolate; arrange on a serving plate covered with parchment paper.  
  5. Sprinkle chocolate halves with crushed pistachios.

Notes

*If you wanted to leave the pistachios off, you could.  You could also sprinkle some sea salt instead and that would also be a great (less work) option!
