  • 8 ounces soba noodles (or noodles of your choice)
  • 4 ounces shredded carrots
  • 4 ounces shredded cabbage
  • 1/2 cup sliced green onions
  • 1/4 cup chopped peanuts
  • 1/2 cup chopped cilantro

Instructions

  1. Cook the Noodles: Bring a pot of water to a boil and cook the noodles according to package instructions (will depend on if you use soba noodles or rice noodles.
  2. Rinse & Cool: Drain and rinse the noodles under cold water to stop the cooking process and remove excess starch. This step is key for achieving the right texture in a cold dish.
  3. Make the Peanut Sauce: In a bowl, whisk together peanut butter, soy sauce, sesame oil, rice vinegar, or maple syrup, Sriracha (if using), ginger, and warm water until smooth and pourable.
  4. Combine: Add the cooled noodles to a large bowl and toss with the peanut sauce until evenly coated.
  5. Add Toppings: Top with your choice of vegetables, shredded carrots, cabbage, green onions, cilantro, and chopped peanuts.
  6. Chill or Serve: Serve immediately or refrigerate for 30–60 minutes for an even more refreshing dish.
