Creamy chipotle mayo made with simple ingredients in minutes. A smoky, slightly spicy sauce perfect for sandwiches, tacos, bowls, and more.

Ingredients

  • 1/2 cup mayonnaise
  • 1-2 chipotle peppers, in adobo sauce, finely chopped
  • 1-2 teaspoons adobo sauce
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon garlic powder

Instructions

  1. In a small bowl, add the mayonnaise, finely chopped chipotle peppers, and a teaspoon of the adobo sauce. Stir until the mixture is smooth and evenly combined. Add the lime juice and garlic powder, then mix again until fully incorporated.
  2. Taste and adjust as needed.  Add more adobo sauce for a deeper smoky flavor, another chipotle pepper for extra heat, or an additional squeeze of lime juice if you prefer a brighter finish.  
  3. Cover and refrigerate for at least 15-20 minutes to let the flavors meld.  
  4. If you prefer a completely smooth, restaurant-style consistency with no visible pieces, you can use an immersion blender instead.  Simply add all the ingredients to a tall jar or cup and blend until fully smooth and creamy.
