- 1/2 cup mayonnaise
- 1-2 chipotle peppers, in adobo sauce, finely chopped
- 1-2 teaspoons adobo sauce
- 1 tablespoon fresh lime juice
- 1/2 teaspoon garlic powder
Instructions
- In a small bowl, add the mayonnaise, finely chopped chipotle peppers, and a teaspoon of the adobo sauce. Stir until the mixture is smooth and evenly combined. Add the lime juice and garlic powder, then mix again until fully incorporated.
- Taste and adjust as needed. Add more adobo sauce for a deeper smoky flavor, another chipotle pepper for extra heat, or an additional squeeze of lime juice if you prefer a brighter finish.
- Cover and refrigerate for at least 15-20 minutes to let the flavors meld.
- If you prefer a completely smooth, restaurant-style consistency with no visible pieces, you can use an immersion blender instead. Simply add all the ingredients to a tall jar or cup and blend until fully smooth and creamy.
