Blueberry Popsicles

Blueberries, water, and mint simple syrup.  That’s it!  Refreshing, hydrating, & just what you need to make for homemade Blueberry Popsicles!

Ingredients

  • 1 cup blueberries (~6 ounces)
  • 1/2 cup water
  • 23 tablespoons mint simple syrup

Instructions

  1. Blend the blueberries, water, and mint simple syrup.
  2. Pour or spoon the blueberry mint mixture into popsicle molds and freeze until solid (4 hours or more).  If using popsicle sticks, insert the sticks when the popsicles are partially frozen. Makes ~4 blueberry popsicles.

Notes

*I used 1/2 cup water to dilute the blueberries just a bit.  If you use just ¼ cup of water, it will only make about 3 popsicles.  I think the ½ cup water works well to give you 4 popsicles.  Because you’re diluting them, start with 2 tablespoons of the mint simple syrup and see if it’s to your liking of sweetness level.  And then add one tablespoon at a time until they’re sweet enough.  I used 3 tablespoons total.

*I haven’t made these with frozen blueberries.  Because they are frozen, you might need a tad less water.  If you give these a try with frozen blueberries, let me know (& if I finish these up, I’ll give it a whirl!)

*You can always add in a tablespoon of lime juice, extra mint – you do you!  The key is cool, refreshing, and thirst quenching!  Enjoy!
