Ingredients

  • 1 1/2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 cup milk, your choice
  • 1 egg, lightly beaten
  • 1 banana, mashed
  • 1 teaspoon vanilla extract
  • 1/4 cup applesauce, unsweetened
  • 1 tablespoon grapeseed oil
  • 2/3 cup blueberries

Instructions

  1. Preheat the oven to 350˚F and grease an 8×4 baking dish with non-stick cooking spray. 
  2. Combine in a large mixing bowl the oats, cinnamon, and baking powder.
  3. Combine in a medium bowl the milk, applesauce, grapeseed oil, egg, mashed banana, and vanilla extract.
  4. Add the milk mixture to the oat mixture. Stir well. Add in the blueberries. Pour the oatmeal mixture into the prepared pan.
  5. Bake until the oatmeal is set and golden brown, ~25-30 minutes.
  6. Cool – let the oatmeal cool for 5 minutes before serving, otherwise it will easily crumble.
