Key Lime Shrimp

This Key Lime Shrimp is bold, bright, and bursting with flavor! Serve as an appetizer or add as protein to any main meal. It’s an easy, refreshing dish that tastes like summer in every bite!

Ingredients

Units Scale
  • 1 pound cooked, peeled, and deveined
  • 2 tablespoons garlic, minced
  • 1/2 cup cilantro, chopped
  • 1/8 cup extra-virgin olive oil
  • 1/4 cup key lime juice

Instructions

  1. Whisk the olive oil, key lime juice, cilantro, and garlic. *see notes*
  2. Toss the shrimp in the marinade to coat it and allow it to sit for at least 10 minutes.  Continue to shake every 2 minutes.
  3. Serve immediately as an appetizer or as your main protein dish at your meal!

Notes

*You can also mix the marinade together and ‘marinate’ the shrimp 10 minutes prior to eating. I did this for my lunches during the week when I was recipe-testing. If you keep the shrimp in the marinade for up to 3 days, it will make them tougher, which, if you’ve had the one from Whole Foods, does taste tough.  So, learn from me and do it the right way!

*I found that using more key lime juice than olive oil was the best option. Key lime juice is tart and flavorful, and if you use more olive oil than key lime juice, it won’t shine through!
