It’s made with simple, real ingredients and comes together quickly, making it an easy addition to tacos, grain bowls, or even roasted veggies. I love sauces like this because they not only add big flavor but also encourage us to enjoy more vegetables and balanced meals in a delicious way.

Ingredients

  • 1/2 cup Skyr (Icelandic yogurt)
  • 2 tablespoons lime juice
  • 1 small jalapeño, seeds removed for mild flavor
  • 1 garlic clove
  • 1 cup cilantro (not packed, but not loose)

Instructions

  1. Prep the ingredients.  Chop the cilantro, peel the garlic, and remove the seeds from the jalapeño.
  2. Add the skyr, lime juice, cilantro, jalapeño, and garlic clove to a food processor.
  3. Blend until smooth and creamy, scraping down the sides as needed.
  4. Taste and adjust – add more lime juice for brightness, more cilantro for freshness, or an extra piece of jalapeño if you like it spicier.
  5. Transfer to a jar or container and refrigerate until ready to use. It slightly thickens as it chills.
