These blistered shishito peppers made on a grill pan are a simple, flavorful appetizer perfect for St. Patrick’s Day or anytime you’re celebrating all things green.

Ingredients

  • 8ounces Shishito Peppers
  • 1 tablespoon extra-virgin olive oil OR sesame oil
  • 1/2 teaspoon kosher salt
  • fresh lemon juice (a spritz)

Instructions

  1. Heat your grill pan (or cast-iron skillet) over medium-high heat until hot.
  2. Toss the peppers with olive oil and kosher salt until lightly coated.
  3. Add to the grill pan in a single layer. Let them cook undisturbed for 2–3 minutes until blistered.
  4. Turn and continue cooking for another 3–5 minutes, rotating occasionally until softened and charred in spots.
  5. Finish with flaky sea salt (if desired) and a squeeze of fresh lemon.
  6. Serve immediately while warm.
